"Support Kitchen" model
The working project provides for a major overhaul of the catering unit, work on redevelopment of premises, repair, decoration of walls and ceilings, replacement of floor coverings, replacement of water supply and sewage pipelines, replacement of electrical wiring, installation of supply and exhaust ventilation, replacement of existing old kitchen equipment, replacement of window and door blocks. To bring the dining room premises up to sanitary standards, implement the HACCP food safety management system, improve the operational performance of the facility, and bring the premises to an aesthetic state, the project provides for the following measures: - after analyzing the technology of the catering unit, changes were made to the layout of the premises, as well as their intended purpose), so that it meets the requirements of the HACCP Food Safety System; - production was divided according to the flow of processes, taking into account the requirements of the HACCP Food Safety System; - a separate workshop for primary processing of products was created: cleaning, cutting, grinding and forming all necessary blanks (semi-finished products) with their subsequent storage in refrigerated cabinets for semi-finished products. - equipment was selected in connection with the introduction of a new menu and in order to be able to diversify it and produce different dishes (TX brand drawings); - according to the requirements of the food safety system, hand sinks and additional sinks were added to each production area; - replacement of existing sewage and water supply pipelines; - installation of water heaters; - to maintain the optimal temperature and humidity regime and ensure sanitary and hygienic conditions of the air environment, supply and exhaust ventilation with mechanical drive is provided. - replacement of electrical wiring for power supply of kitchen, ventilation, lighting and socket groups, installation of new switchboards and control panels

Implementation of the modernization project (cartwork) of the Ladyzhyn Lyceum of the Ladyzhyn Village Council of the Uman District of the Cherkasy Region at the address: Cherkasy Region, Uman District, Ladyzhynka Village Shkilna St., 20) (hereinafter the PROJECT) is the key to a healthy nation in the future - this is full-fledged healthy nutrition for schoolchildren today. In accordance with the Law of Ukraine "On Local Self-Government" (Article 32), the own powers of the executive bodies of village, settlement, and city councils include, in particular, the management of educational institutions, including the organization of meals in educational institutions. That is why the issue of major repairs of the dining room (dining block) of the Ladyzhyn Lyceum of the Ladyzhyn Village Council is a priority for the Ladyzhyn Village Council. A comprehensive approach when implementing the project involves safety of use, quality of food preparation and consumption, aesthetic component, compliance with sanitary standards, etc. The dining room at the school should perform a single function - eating, and therefore, when implementing the PROJECT, optimally favorable color schemes will be used for the design of the premises, which will contribute to the harmonious consumption of food, optimal decoration will be used: practical and functional furniture, naturalness and environmental friendliness of finishing materials, concise lighting, favorable interior, etc. When preparing the technical specifications for the design of works on the modernization of the dining room (catering unit) of the Ladyzhyn Lyceum of the Ladyzhyn Village Council, all requirements for the equipment were taken into account: thermal equipment (steam and convection ovens, multifunctional cooking systems, electric stoves) refrigeration equipment (refrigerators and freezers) electromechanical equipment (vegetable peelers, meat grinders, dough mixers, etc.) special and dishwasher equipment for the dining room (dishwasher, boiler washer, reverse osmosis system). The reconstruction project at 54 Yuriy Kovalenka St. is the creation of a modern educational space based on the "basic kitchen" model and HACCP standards. Key project areas: Technological re-equipment: Replacing old stoves with energy-efficient combi-steamers and cooking boilers. This provides 636 students with healthy food (steaming, stewing) and saves up to 40% of electricity. Safety and zoning: Division of premises into separate departments (meat, vegetable, flour) to prevent cross-contamination. Installation of sterilizers for knives and washing machines with disinfection at $85^{\circ}\text{C}$. Inclusivity: Installation of vertical lifts at the entrances to the MGN, a freight lift for raw materials from the basement and marking of zones in Braille. Engineering modernization: New ventilation system, water filtration and softening, installation of grease traps to protect the sewer system. Canteen renovation: Complete renovation of the hall for 215 seats using antibacterial HPL panels, ergonomic furniture and contactless hygiene zones. Result: Transformation of an outdated block into a safe, high-tech production and a comfortable place for students to relax.

Renovation of the catering unit of the Chernelytsky Lyceum.
Overhaul of the catering unit is a set of works to restore its functionality and improve operational performance, including the replacement of engineering networks, equipment, as well as interior and exterior decoration, in accordance with the DBN standards. Overhaul of the catering unit is not just a renovation of the walls, but an investment in operational efficiency, safety and compliance with the European integration requirements of Ukraine. The problem related to the catering unit and kitchen of the Chernelytsky Lyceum is relevant in the context of ensuring the creation of a modern, safe school nutrition system, the vision and mission of the institution. The project is aimed at bringing the material and technical base of the catering unit and the dining room to sanitary, hygienic and aesthetic conditions in accordance with the HACCP system. The working project was developed on the basis of the design task, in accordance with current norms and rules, instructions, national standards and provides for measures to ensure environmental safety. Therefore, the implementation of the project to overhaul the catering unit is important not only to ensure the comfort and safety of students and staff, but also to preserve their health and improve the quality of the educational process.

This project is aimed at creating a modern, safe and energy-efficient space for catering.
