General information

Description of the project

Creation of a safe, modern, energy-efficient and functional catering unit according to the "Basic Kitchen" model, in compliance with all HACCP, fire and technical safety standards. The current condition of the catering unit does not meet modern requirements, the equipment is outdated. The overhaul involves: repair of internal water supply and sewage networks, new ventilation, installation of modern equipment, general construction work.

Description of the purpose of the project and ways to achieve it

Ensuring safe, sanitary and modern conditions for food preparation and storage by completely updating the material and technical base of the catering unit, in accordance with current regulations and standards. Improving the sanitary and hygienic condition of the catering unit. Ensuring compliance with modern requirements of HACCP, DBN, Sanitary Regulations. Increasing energy efficiency and safety of operation of premises and equipment. Optimization of the technological process of food preparation. Improving working conditions for personnel. Methods of achieving the goal: Construction work: Dismantling worn-out structures, communications and old equipment. Repair/replacement of floors, walls, ceilings using moisture- and heat-resistant materials. Modernization of engineering networks: Replacement of electrical wiring, water supply, sewage, ventilation. Installation of energy-saving lighting and exhaust systems. Purchase and installation of new technological equipment: Modern stoves, combi-steamers, refrigerators, sinks, stainless steel furniture, etc. Introduction of mechanization of technological processes (grinding, mixing, heat treatment, etc.). Zoning according to the technological process: Division of the premises into functional workshops (cold, hot, washing, warehouse). Organization of logistics for the movement of raw materials, finished products and personnel. Ensuring sanitary and hygienic requirements: Arrangement of washbasins, bathrooms, ventilation. Equipment for disinfection, compliance with personal hygiene rules for employees. Fire and technogenic safety: Fire alarm systems, emergency lighting, evacuation exits. Compliance with regulatory documentation: All activities are carried out in accordance with the technical specifications, DBN, Sanitary norms, instructions and acts.

Problems and solutions resulting from project implementation

Worn-out room structures (walls, floor, ceiling). Problem: The coating does not meet sanitary requirements, there are cracks, peeling, mold. Difficulty in cleaning and disinfection. Solution methods: Dismantling old coatings. Leveling and finishing surfaces with moisture-resistant, heat-resistant and easy-to-clean materials (tiles, special paints, PVC panels). Arrangement of anti-slip, acid-resistant floors. Outdated engineering communications Problem: Old electrical wiring, poor ventilation, emergency condition of pipes. Frequent interruptions in water supply or electricity. Solution methods: Complete replacement of electrical wiring taking into account the needs of modern equipment. Installation of modern supply and exhaust ventilation with filters. Reconstruction of water supply, sewage and heat supply systems with energy-saving solutions. Inconsistent or missing technological equipment Problem: Worn out, outdated, dangerous or unproductive equipment. Lack of equipment for the full technological process. Solution methods: Purchase and installation of modern certified equipment (steam combi ovens, electric stoves, vegetable cutters, refrigeration equipment, etc.). Use of energy-efficient and multifunctional devices. Placement of equipment in compliance with technological lines and HACCP principles.
