Description of the project

The project involves the reconstruction of the catering unit premises, which are located in the one-story building of the educational building of the M.K. Zerov Zinkiv Lyceum of the Zinkiv City Council of the Poltava region at 20 Vozdvyzhenska Street, Zinkiv, Poltava region. The main goal of the initiative is to create safe, modern and effective conditions for organizing student meals in accordance with current sanitary and hygienic norms and quality standards.

The purpose of the reconstruction of the catering unit is to transition to a modern technological process of cooking. When creating the project, the requirements of DBN V.2.2-25:2009 "Buildings and structures. Catering enterprises (restaurant establishments)" and the list of recommended equipment for catering units of educational institutions developed by the Ministry of Education and the best global practices for optimizing space and all processes in the kitchen during the preparation of dishes were taken into account.

Problems and solutions resulting from project implementation

The catering unit of the Zinkivka Support Lyceum named after M.K. Zerov of the Zinkivka City Council lacks: In the warehouse: a separate entrance; a refrigerated room for storing fruits and vegetables; insufficient area for placing refrigeration and freezing equipment. In the production room: a cold area for preparing salads and an area for cutting bread; an area for primary processing of meat and fish with washing baths; an area for primary processing of vegetables and fruits with washing baths; surfaces are not made of stainless material (Law No. 771, clause 5, part 1, article 42). Rooms for washing kitchen and tableware, returnable containers. Cloakroom, toilet and washbasins for washing hands of personnel. Auxiliary rooms for preparing and storing disinfectants and storing inventory, etc. Inability to maintain the distance between tables in dining rooms in accordance with the standards prescribed in the Sanitary Regulations for institutions of general secondary education.
