The food block is designed to provide hot meals to students of an educational institution. The food block includes the following rooms: loading room, room for daily supply, room for refrigerators and freezers, vegetable and fruit storeroom, staff room, meat and fish shop, vegetable shop, washing of kitchen and tableware, hot and cold shop, dining room hall. The dining hall provides for simultaneous boarding - 210 students. The work of the food block is provided on raw materials. The number of conventional dishes sold in the dining room per hour is 910. The products are delivered every day and meet the requirements of the current regulatory and technical documentation, are in clean containers and are accompanied by documents that prove their quality and compliance with the marking labels on each container, where the date is indicated , production time and final storage period. Dry products are stored in containers on racks or on a pallet. Perishable products are loaded for storage in freezers and refrigerators. Each type of product is stored separately. Meat and fish are delivered frozen to production. Products are delivered by special vehicles. Products accepted for storage are transferred into clean, marked containers. After unloading, the container is returned to the supplier at the base enterprises, where it is subject to sanitary treatment. Preliminary preparation of meat, fish and vegetable products is carried out in the relevant workshops. Heat treatment of products is carried out on the heat treatment line, which is equipped with a 6-burner stove, a multifunctional cooking device, and a steam convection oven. All heating equipment is electric. An exhaust umbrella is installed above the heating equipment. Delivery of ready-made dishes to the dining hall is carried out through the Classic distribution line. Tableware can be washed in five sinks installed in the laundry room. Washing of kitchen utensils is carried out in a two-section washing tub, which is also installed in the room for washing dining and kitchen utensils separately in the area of washing kitchen utensils. Food waste is collected in a specially marked container (container with a lid), which is placed in a refrigerator, which is installed in the room for washing dining and kitchen utensils. Garbage, solid household waste, used containers are accumulated in a metal container with a lid, which is installed on a special concrete platform on the territory, and are taken to solid waste landfills. The equipment and inventory are made of materials that do not have a harmful effect on the products, are chemically resistant, are not subject to corrosion and are approved by the State Sanitary Supervision authorities. Dining tables have a hygienic cover. Tables must be cleaned after each meal. The operating mode of the food block is a single shift with a shift duration of 8 hours, 256 working days per year. The number of school days at the lyceum is 175 days per year. Production and service staff of the canteen - 5 people. Харчоблок призначений для забезпечення гарячим харчуванням учнів навчально-виховного закладу.&nbsp;До складу харчоблоку входять наступні приміщення: завантажувальна, приміщення добового запасу, приміщення для холодильних та морозильних шаф, комора овочів та фруктів, приміщення персоналу, м&rsquo;ясо-рибний цех, овочевий цех, мийна кухонного та столового посуду, гарячий та холодний цех, обідній зал. Обідній зал передбачає одночасну посадку - 210 учнів.&nbsp;Робота харчоблоку передбачена на сировині.&nbsp;Кількість умовних страв, що реалізуються в їдальні за годину - 910.&nbsp;Продукти доставляються кожного дня і відповідають вимогам діючої нормативно-технічної документації, знаходяться в чистій тарі та супроводжуються документами, які доводять їх якість та відповідність маркувальним ярликам на кожному тарному місці, де вказані дата, час виготовлення та кінцевий термін зберігання.&nbsp;Сухі продукти зберігаються в тарі на стелажах або на піддоні.&nbsp;Продукти, які швидко псуються, завантажуються на зберігання в морозильну та холодильні шафи. Кожен вид продуктів зберігається окремо.&nbsp;М&rsquo;ясо та риба на виробництво поступають замороженими.&nbsp;Продукти доставляються спеціальним автотранспортом. Прийняті на зберігання продукти перекладають у чисту, промарковану тару. Тара після розвантаження повертається постачальнику на базові підприємства, де підлягає санітарній обробці.&nbsp;Попередня підготовка м&rsquo;ясної, рибної і овочевої продукції проводиться у відповідних цехах.&nbsp;Теплова обробка продуктів проводиться на лінії теплової обробки, яка обладнується 6-ти конфорочною плитою, мультифункціональним апаратом для варіння, піччю пароконвекційною.&nbsp;Все теплове обладнання - електричне. Над тепловим обладнанням встановлюється витяжний зонт.&nbsp;Подача готових страв в обідню залу проводиться через лінію роздачі Класік.&nbsp;Миття столового посуду передбачено в п'яти мийних ваннах,&nbsp;встановлених в приміщенні мийної.&nbsp;Миття кухонного посуду проводиться в двосекційній мийній ванні, встановленій також в приміщенні мийної столового та кухонного посуду окремо в зоні миття кухонного посуду.&nbsp;Харчові відходи збирають у спеціально промарковану тару (бачок з кришкою), яку розміщують в холодильній шафі, що встановлена в приміщенні мийної столового та кухонного посуду.&nbsp;Сміття, тверді побутові відходи, використана тара накопичується в металевому контейнері, закритому кришкою, який встановлений на спеціальному бетонному майданчику на території та вивозяться на полігони ТПВ.&nbsp;Обладнання та інвентар виконані з матеріалів, які шкідливо не впливають на продукцію, хімічно стійких, які не піддаються корозії та дозволені органами Державного санітарного нагляду.&nbsp;Обідні столи мають гігієнічне покриття. Прибирання столів повинно&nbsp;проводитися після кожного прийому їжі.&nbsp;Режим роботи харчоблоку - однозмінний з тривалістю зміни 8 годин,&nbsp;256 робочих днів на рік.&nbsp;Кількість навчальних днів в ліцею - 175 днів на рік.&nbsp;Виробничий та обслуговуючий персонал їдальні - 5 осіб.
